Job Purpose: Assist in the day-to-day operations of a full service Cafeteria and Catering service. Serves as back up in absence of manager.
Job Functions:
- OPERATIONS: Assist in the daily operations of the Cafe; including kitchen and food preparation for all Cafe services including catering events. Monitors food prep methods regarding portion size and presentation of food to ensure acceptable presentation. Supervises the cleaning of the kitchen and dining areas within the College Cafe. Ensures compliance of health and fire regulations regarding preparation and serving of food. Ensures excellent customer service including investigating and resolving complaints regarding food quality and service. Responsible for processing end of day register cash out procedures.
- SUPERVISION: Coordinates assignments of all kitchen personnel to ensure economical use of food and timely preparation. Responsible for the supervision and evaluation of workers and work flow processes to ensure quality standards and service. Assist with the interviewing and hiring of new staff. Responsible for training employees on food preparation, serving and sanitation and safety procedures.
- INVENTORY: Responsible for inventory oversight of supplies and food goods for cafe operation. Schedules and receives food and beverage deliveries, checks delivery content of orders and performs inventory of stock and reports shortages to appropriate personnel
- CATERING: Along with the Event Department’s assistance; plan and execute catered events as needed, from start to finish, provide and communicate a layout/ diagram of catering events and walk all areas before, during, and after events. May perform final food garnishing tasks prior to serving. May provide tableside or serving line services such as, ladle soup, toss salads, portion pies and desserts. May assist coworkers during staffing shortages. Determines when and whether to call employees in to cover staffing needs. Assist in the preparation and service of food and drink. Direct and supervise a small team of Catering Assistants in their day-to-day duties. Provide efficient counter service, ensuring the presentation of food is maintained to the highest standard, adhering to portion control guidelines.
- Other: Performs other duties as assigned.
Minimum and Additional Requirements
A high school diploma and supervisory experience in quantity and quality cooking. Knowledge of the procurement, storage, preparation, distribution, and serving of food products. Knowledge of principles and procedures of food service management. Ability to teach food preparation and cooking. Knowledge of SC DHEC sanitary and safety procedures pertaining to a full service cafeteria. Ability to plan, assign and supervise the food of food services personnel. Ability to maintain food service records and prepare written reports.
Preferred Qualifications
An associate’s degree and three (3) years supervisory experience in quantity and quality cooking; or a high school diploma and five (5) years supervisory experience in quantity and quality cooking.
