Position Summary
This position exists to help coordinate preparation and timely execution of event food and provide operational support for the main catering kitchen. Under the general supervision of the Production Chef Manager, this position is responsible for accurately cooking food ordered through Lory Catering in accordance with established standards and recipes. This position will also assist with set up and service of ordered food and beverage.

Brief Work Unit Description
LSC Catering is the largest caterer in northern Colorado and serves 3,000 events each year. The department is housed in the Lory Student Center, a 370,000 square foot facility, where it is the exclusive caterer. The department also strives to be the caterer of choice on campus and in the community.
Lory Dining Services Mission: Lory Dining Services exists to sell a variety of food and beverages, in a safe and sanitary environment and for the best possible value, to a diverse customer base at Colorado State University.
Lory Student Center Mission: The mission of the Lory Student Center (LSC) is to serve as a student-centered organization at the heart of campus, providing programs and services that create an inclusive community and inspire active, engaged learning.
The Lory Student Center (LSC) is a nationally recognized student union within the Division of Student Affairs at Colorado State University. Operating as a $40 million auxiliary enterprise, the LSC employs approximately 125 full-time staff and 650 student and hourly employees, welcomes nearly 24,000 daily visitors, and hosts more than 13,000 annual events. The LSC houses the CSU Bookstore; Campus Activities; Marketing; Operations; Student Leadership, Involvement & Community Engagement (SLiCE); business and service partners; and Lory Dining Services.

Essential Job Duties
Hot Food Production
- Follow established guidelines to prepare entrees, side dishes, sauces, soups, and desserts for catered events
- Calculate and adjust recipe quantities for specific events and ensure recipe adherence for consistency
- Maintain organization of prepared food to be heated for service, and accurately coordinate execution of all foods to be provided by department before event time
- Help mentor and coach student employees with general kitchen processes and task management
Environmental Health & Safety
- Monitors and maintains food temperature logs in accordance with State, County, and EHS requirements
- Ensures proper cooling, date and label marking, food rotation, thawing, and cooking
- Assists with kitchen cleaning and closing responsibilities including cleaning and sanitizing work surfaces, and equipment, sweeping & mopping, discarding trash, recycling, and compost, and clearing dishes to the dish room
Event Service
- Assists with gathering appropriate supplies and equipment to be delivered with food and beverage ordered
- Helps deliver and set up service tables or place settings for various service styles, tend to buffets and serve table

Minimum Qualifications
- Minimum 1 year food production experience to include experience in catering
- Current certification in ServSafe and working knowledge of HACCP practices, or other food handling/health department certification – completed food safety training/classes
- Experience working with fresh produce which includes inventory, ordering, preparing (i.e. washing, handling, cutting etc.)
Preferred Qualifications
- Excellent verbal communication and interpersonal skills to maintain a work environment where teamwork can thrive
- Leadership capabilities: able to guide student employees to ensure adherence to defined policies and procedures
- Strong knowledge of health inspections, state and local food regulations
- Experience working in a college/university food service environment, serving a diverse population of customers and constituents
- Experience working in a high-volume food service setting
Salary Range
$20.00/hour
