Primary Purpose of Position

The Postdoctoral Research Associate
will lead and support research activities for a USDA-funded project focused on developing sustainable processing strategies to convert grain
peas into high-quality pea protein isolate while improving energy efficiency, functionality, and product performance. The successful
candidate will work independently and collaboratively to design experiments, optimize processing technologies, analyze data, and disseminate
research findings.



Key Responsibilities: Lead and execute laboratory- and pilot-scale research on ultrasonic-assisted pea protein
extraction and fractionation; Design and optimize protein modification strategies (physical, enzymatic, and non-thermal methods) to improve
solubility, emulsification, gelation, and foaming properties; Develop and evaluate non-thermal drying technologies (e.g.,
ultrasound-assisted drying, low-temperature drying, novel dehydration systems) to reduce energy consumption and preserve protein
functionality; Conduct process optimization studies using DOE and response surface methodologies; Perform physicochemical and functional
characterization of proteins (protein yield, purity, particle size, solubility, thermal stability, rheology, emulsification, gelation);
Operate and maintain analytical instruments (e.g., HPLC, particle size analyzer, DSC, rheometer, moisture analyzer, drying systems); Assist
the PI with grant proposal preparation, budgeting inputs, and research planning; Mentor graduate and undergraduate students and assist with
training on laboratory protocols and equipment; and Support industry and stakeholder engagement, technology transfer, and extension
activities when applicable

The Urban and Community Food Complex (UCFC) at North
Carolina A&T State University is a 14,796 ft² facility scheduled for completion in Spring 2026, designed to serve as a hub for food
technology innovation, sustainable agriculture, and community engagement. Centered on strengthening urban and community food systems, the
UCFC supports locally grown agriculture while advancing research and workforce development that translate directly into practical solutions
for the region. The facility is envisioned as both a technology incubator and a collaboration platform, connecting university researchers
with industry partners, small-scale farmers, and community organizations to accelerate the development and adoption of value-added food
products and processes. By providing access to specialized spaces, expertise, and pilot-scale capabilities, the UCFC helps stakeholders
improve product quality, safety, shelf-life, and operational efficiency, ultimately enhancing food security, supporting local economic
development, and expanding opportunities for entrepreneurship. Equipped with state-of-the-art capabilities in food processing, food quality
analysis, and food safety, the UCFC will enable cutting-edge R&D, hands-on training, and community-centered
innovation.

Minimum Requirements


PhD in food science, food technology, food engineering, or a related
discipline is required.

Candidate must have in-depth knowledge in ultrasound physics, plant proteins, and food quality analysis.
Applicant must have ability to develop manuscripts, presentations, and assist in preparation of grant proposals. Excellent interpersonal and
written communication skills and demonstrated ability to work both independently and in a team environment are
necessary.
